I am amazed over and over at the flavours that the Cook 4 Me brings out in food in the shortest amount of time! I love that at short notice I can invite someone for a meal and have it on the table in under and hour tasting like I spent all day making it.
INGREDIENTS
12 baby brown onions (300g)
2 tablespoons olive oil
3 rindless bacon slices (195g) chopped coarsely ( I used speck)
315g button mushrooms
3 cloves garlic
2 tablespoons plain (all purpose) flour
4 chicken thigh cutlets (800g)
4 chicken drumsticks (600g)
¼ cup (70g) tomato paste
1 cup (250ml) dry red wine
2 dried bay leaves
6 sprigs fresh thyme
METHOD
- Peel onions, leaving root ends intact. Select Manual – Browning. Heat 2 teaspoons of the oil and cook onions, stirring, until browned lightly. Remove from cooker
- Heat another 2 teaspoons of the oil, Select Manual – Browning. Cook bacon mushrooms and garlic stirring, until browned lightly. Remove from cooker
- Season flour in large bowl; add chicken, toss to coat in flour. Shake off excess. Select Browning and heat remaining oil and cook chicken in batches until browned. Remove from cooker
- Return chicken to cooker with onions, bacon mixture, paste, wine, bay leaves and thyme; secure lid. Select Manual - Quick cook - 10 minutes.
- Wait for the pressure to release and unlock lid. Season to taste; serve sprinkled with thyme leaves.
