I am amazed over and over at the flavours that the Cook 4 Me brings out in food in the shortest amount of time! I love that at short notice I can invite someone for a meal and have it on the table in under and hour tasting like I spent all day making it.

INGREDIENTS


12 baby brown onions (300g)
2 tablespoons olive oil
3 rindless bacon slices (195g) chopped coarsely ( I used speck)
315g button mushrooms
3 cloves garlic
2 tablespoons plain (all purpose) flour
4 chicken thigh cutlets (800g)
4 chicken drumsticks (600g)
¼ cup (70g) tomato paste
1 cup (250ml) dry red wine
2 dried bay leaves
6 sprigs fresh thyme

METHOD

  1. Peel onions, leaving root ends intact. Select Manual – Browning. Heat 2 teaspoons of the oil and cook onions, stirring, until browned lightly. Remove from cooker
  2. Heat another 2 teaspoons of the oil, Select Manual – Browning. Cook bacon mushrooms and garlic stirring, until browned lightly. Remove from cooker
  3. Season flour in large bowl; add chicken, toss to coat in flour. Shake off excess. Select Browning and heat remaining oil and cook chicken in batches until browned. Remove from cooker
  4. Return chicken to cooker with onions, bacon mixture, paste, wine, bay leaves and thyme; secure lid. Select Manual - Quick cook - 10 minutes.
  5. Wait for the pressure to release and unlock lid. Season to taste; serve sprinkled with thyme leaves.
